Air Fryer Twice Baked Sweet Potato Casserole
recipe by Daniel Perez and Lana Horruitiner Perez
- 1 Sweet Potato (you can increase this recipe to serve as many people as you like. Just increase all the ingredients as well.)
- Olive Oil
- Kosher Salt
- Ground Pepper
Filling
- 1/2 Tbl Butter
- 1/2 Tbl Milk
- 2 Tbl Brown Sugar
- 1/8 tsp Cinnamon
- freshly grated Nutmeg
- pinch Salt
- 2 Marshmallows, cut in half
Topping
- 2 Tbl melted Butter
- 2 1/2 Tbl Brown Sugar
- 2 Tbl Flour
- 4 Tbl finely chopped Pecans
-Wash the Sweet Potato and make sure it is thoroughly dry with a paper towel and place in a bowl. Spray with Olive Oil and sprinkle with Salt and Pepper.

-Preheat the Air Fryer Oven. Press “AIR FRY” and set temperature to 390° F for 45 – 55 mins. (Time depends on the size of the sweet potato. Small to medium potatoes take 45 to 50 mins and L:arger ones may take 55 minutes or more. Test with a knife in the last minute to see if it is cooked all the way though.)
-No need to “PREHEAT”.
VORTEX PLUS: Place the slotted baking tray in the middle position.
OMNI/OMNI PLUS: Place drip tray on the bottom level and the baking rack on the lower level.

-While the Sweet Potato is in the oven, prepare the Pecan Topping.
-In a medium bowl, combine 2 Tbl melted Butter, 2 1/2 Tbl Brown Sugar, and 2 Tbl Flour. Mix using a fork until it resembled wet sand.
-Add 4 Tbl chopped Pecans and mix until combined. Set aside.
-Once the Sweet Potatoes are done baking, allow to cool in the air fryer until just cool enough to handle. Slice them in half and use a Tablespoon to scoop out the inside potato, and place in a medium bowl. Leave 1/4 inch of potato in the peel.
-Add 1/2 Tbl Butter, 1/2 Tbl Milk, 2 Tbl Brown Sugar, 1/8 tsp Cinnamon, fresh ground Nutmeg, and a pinch of Salt, to the bowl with the Sweet Potato. Mix well.
– Spoon the mixture back into the Sweet Potato skins, making sure to put an equal amount in every Potato.

-Place 2 Marshmallow halves into the Sweet Potatoes.

-Add the Pecan Topping on top of each Sweet Potato. Try to spread in an even layer and press down a little bit so it sticks.

-Preheat the Air Fryer in “AIR FRY” mode to 400° F for 6 minutes. Keep the trays and racks in the same position. Once it is done preheating, add the Sweet Potatoes. Check often to make sure the top doesn’t burn.
-Remove the Sweet Potatoes and serve. Buen Provecho!
