Here is my video that takes you step by step through the process to make crispy Empanadas in the Vortex Plus. Scroll down for the full recipe.
Vortex Plus Cuban Empanadas 3 Ways

- Goya 5 inch Empanada Discos (You can find these in the frozen Hispanic/Latin food section.)
- 1 large Egg
- 1/8 tsp Sugar for each Empanada
Filling Options:
- Guava Paste
- Cream Cheese
- Instant Pot Cuban Picadillo (click on the title to take you to a video and recipe for my IP Picadillo)
Place one Empanada round in between 2 pieces of parchment paper. Using a rolling pin, roll and turn until you have gone once around and the disc is now about 6 inches in diameter. (Be careful not to roll it too thin.)

(Keep a wet paper towel over the dough to keep it form drying out. If it gets too warm, place it int he refrigerator for a few minutes.)
For Guava Empanadas:
Cut a 1/2 inch thick slice of guava paste and place it in the top 1/3 of the dough, about 1 inch away from the edge.
For Guava and Cheese Empanadas:
Cut a 1/2 inch thick slice of Guava Paste and 1/2 inch thick slice of Cream Cheese, and place in the top 1/3 of the dough making sure to leave an inch from the edge.
For Beef Empanadas:
Place 2 Tbl of Picadillo mixture on the top 1/3 of the dough leaving 1 inch border from the edge. It’s important to use chilled or room temperature meat mixture. Also, make sure not too get too much sauce. Click here for the recipe for my Instant Pot Cuban Picadillo.
Once you have added the filling, fold the bottom edge up to meet the top. Lightly press along the edges with your finger to keep dough together. Use a fork and starting from the first edge, press down crimping the edges. Overlap the fork marks and go all the way around until you reach the other side.
Place the assembled Empanadas on the Vortex baking tray.
In a small bowl, crack 1 large egg and scramble with a fork to make an egg wash. Using a pastry brush, lightly brush the egg over the Empanadas. Sprinkle each Empanada with 1/8 tsp or Sugar. (Yes, even the one with beef! You can leave it off if you want, but I promise it is delicious.)
Press the “AIRFRY” mode on the Vortex Plus. Set the temperature to 380 degrees and the time to 7 mins. (You can do 2 trays at once, just increase the time by 1 min and rotate the trays half way through the cooking cycle.) Once the Vortex displays “ADD FOOD”, place the tray in the middle position and close the door.
Once the Vortex Plus is done cooking, it will display “COOL” then “OFF”. Take the tray out and allow the Empanadas to cool for a few minutes.

Can they be made in a regular oven? It’ll be awhile before I can get a vortex

Absolutely! Traditionally they are deep fried but you can bake them, too. 375 for about 15 to 20 mins.
