April 26 and I am on week 7 of COVID-19 quarantine.

Like the rest of you, my family has been stuck in the house trying to get through this insane time in our history. It’s been hard, especially for my 2 kids, one in 10th grade and 1 in her first year of college. To go from finding your independence as a young adult (my son would get up on his own in the mornings and take the subway to and from high school every day and my daughter, well she was living the awesome college life and having a great time), to having to be quarantined with your parents in the house 24/7 is challenging to say the least. Of course everyone is in the same predicament, but I think being a NYC teen makes this change in life even more blatant and extreme. Not only were we the worst hit by this virus, but kids in NYC grow up in a very independent world of learning to get around alone using mass transit, hanging out with friends in the city, and navigating the life of traveling and living amongst millions of people everyday. Being confined to the house is a complete 180° for them.

So as a family we have been trying to keep busy and come up with new things and new ideas to keep us entertained. One of the silver linings has been cooking with my daughter. She has awakened a great talent for cooking, and it’s been great fun coming up with new ideas and trying different recipes with her and she has had some great ideas for my blog and YouTube channel. One of her cool ideas was to do start doing “Quarantine Snacks” and easy recipes for people to try at home. In one of our brainstorming sessions as I was looking at the rotisserie basket I thought, “Hmmmm, I wonder if I could make popcorn in that?” And the answer….Yes, yes you can!

Instant Air Fryer Oven Popcorn

• 1/3 cup Popcorn kernels
• Olive Oil Spray

Equipment:

Rotisserie Basket

*** Please Note, you cannot use the Basket that comes with the Vortex Plus. The holes are way too big and the kernels will fall through. You need the kind of basket below.***

Place 1/3 cup Popcorn Kernels into a small bowl.

Spray the Corn Kernels with about 5 or 6 spritzes of Olive Oil. Toss to distribute the oil.

Insert the Vortex Plus/Omni/Omni Plus Spit through the Rotisserie Basket and screw the screws that came with the Spits to hold the basket into place.

Place the Popcorn Kernels into the Rotisserie Basket.

Insert the Basket into the Air Fryer Oven and set the Temperature to 450° F (400° F for the Vortex Plus or the highest temperature it can go) and set the Time to 6 – 8 minutes. Press “START”.

Once it is done, carefully remove from the oven and pour into a bowl.
