Some of my fondest childhood memories around food are the times with family. But not all of those memories took place over home cooked meals. As a kid, I used to love the times when my family would go out to dinner with my Grandparents Bunny and David. Sometimes it would be our regular Chinese Restaurant in Pembroke Pines, Florida and other times it was Corky’s Jewish Deli (which sadly isn’t around anymore). But on special occasions we would get to go to The Ark in Davie, Florida which sadly closed it’s doors in 2012. If you had ever had the pleasure to go back in the day, you might remember their French Toast during brunch, which was the only french toast I would eat as a child (my grandmother called over the chef to ask how he made it and he told us it was coated in corn flakes and deep fried. Maybe that’s why I like the Captain Crunch French Toast from Blue Moon which you can find my air fryer recipe here.)
The other thing my grandmother loved to order from The Ark was their Prime Rib. She would always let me have a piece and I remember it was so delicious and “like BUTTAH”! But as delectable as it is, Prime Rib is one of those things I never made at home because, like most people, the fear of ruining such an expensive cut of meat scares the snot out of me. Or at least it used to!
Using the Rotisserie function on the Instant Vortex/Omni/Omni Plus will give you the perfect Prime Rib just like at a restaurant. Every time I make this, it brings back the best memories and I can’t believe how easy it is.
Air Fryer Rotisserie Prime Rib
Recipe by Lana Horruitiner Perez
- 5 – 6 Lb Bone in First Cut/Center Cut Rib Roast or < 4 lb Boneless Rib Roast
- Kosher Salt
- Ground Pepper
**I like my Prime Rib simply seasoned with Salt and Pepper, but feel free to season yours however you want.**
Equipment: Rotisserie Spit and Forks, kitchen twine
-Take your Bone-in Rib Roast and remove the bone and any large pieces of hard fat. (If you are using a Boneless Rib Roast you can skip this step. Also, don’t remove all the fat, just the hard pieces.)
**Save the bone and any trimmings in a Ziploc and freeze to make bone broth in your Instant Pot.**
– Sprinkle liberally with Salt and Ground Pepper on all sides. Make sure to rub into the meat and fat.
-Using kitchen twine, tie the Rib Roast so it is more of a circular, compact, and even shape.
-Place one of the Rotisserie Forks on one end of the Spit. Insert the Rotisserie Spit lengthwise, through the Roast and push it firmly onto the Fork.. (Use a sharp knife if you need to, to make a slit to help guide the Spit.)
-Attach the other Fork to the other end making sure to push into the meat so that it is sandwiched tightly between the Forks. Try and spin the Roast to make sure the weight is distributed as evenly as possible.
-If using an Omni/Omni Plus you can place foil on the bottom and cover the bottom heating elements to help with clean-up.
-Insert the Roast into the Air Fry Oven. Press “ROAST” and set temperature to 450° F for the Omni/Omni Plus or 400° F for Vortex Plus. Set time to 15 mins. After 15 mins reduce temperature to 250° F and continue cooking for 45 – 55 minutes. **Always test temperature and remove when Roast reaches 120° F. While you let it rest the residual heat will cook it to the desired 130° F for medium rare.**
-Once done, remove and let the Roast rest covered with foil (or you can let it rest inside the Oven, but make sure to open the door for a bit to let the hot air out so it doesn’t continue overcooking.)
-Remove the Spit and slice. Buen Provecho!

I have a 2.5 pound rib roast, after removing the bones. Would I airfry/roast it for the same length of time?

Hi. Check the temp it at 40 mins. If you want it medium rare take it it st 120 degrees F.

I don’t understand…in the do’nt & don’ts video you emphasized that nothing more than 4# is ever supposed to be cooked on the skewer of in basket, yet the prime rib roast was listed as between 5-6#?

Hi. It’s 5 to 6 lb bone in. So once you remove the bone, it makes it less than 4 lbs.

That’s one big disadvantage of these air dryers.
You cannot cook larger roasts or beasts.
Expensive french fry maker.

Not true, You can absolutely cook a larger roast, you just can’t do it on the rotisserie. But I have fit a 7 lb roast on the rack just fine.

Hi! You can follow the same instructions just place it on the rack instead of the rotisserie. I would flip it twice during the first few minutes of cooking to brown it on high on all sides. Make sure you place foil on the bottom for easier cleanup or use a tray with sides to contain the juices.

Absolutely! And if you place the foil over the bottom the way I show in the video on roasting a chicken over 4 lbs, it collects and is really easy to list out and pour into a pan.

Oh absolutely! If you place the foil the way I did, it collects the juices and you can lift the whole thing right out and pour into a pan to thicken or just simply strain right into a bowl and serve.

Just found this for prime rib. Seems to be a well thought out why to seat and cook.
I am not Jewish. Will I still be able to cook this recipe? Not sure what religion has to do with cooking.

I’m not sure what you mean about what religion has to do with cooking? I’m Jewish These are Jewish recipes from my family. Judaism is not just a religion but a culture with a cuisine all it’s own (of course Ashkenazic Jews and Sephardic Jews have different cuisines). But nowhere have I stated you have to be Jewish to cook this food. I think I stated quite clearly the opposite. I want to share my family’s traditional dishes with everyone.

Is this the time n temps I would roast a Boston butt pork roast in the Omni? Also, what is th max weight for Omni rotesseri? Lana, you are the greatest, I’m always using your information n recipes. You do a great service for those of us who aren’t prone to experimenting.

This was really good! My cut was just under 4 lbs and I used my vortex pro. Salt, pepper, and added a little Susie Q’s. Make sure the spit has the weight well-balanced! I cooked it 400 @20min then 255 @45 minutes. DELICIOUS. Although next time I think I’ll cook a little longer/higher as I’d like it a little less rare. But very happy with results regardless 🙂

Hi. You should just have to turn the Temp knob and it will adjust and then press start. If you ahve the Omni Plus you ahve to press in the Time/Temp button first then turn the knob to change the Temp. Also press START. Hope this helps.

The lowest the Omni Plus will allow you to set the temperature in this mode is 320° and you also can’t set the time on the Plus below 20 minutes. Trying to use these smart programs is infuriating and there’s absolutely nowhere to find info about them anywhere for any actual recipes. We’ve had to find a work around for everything we’ve done because we can’t adjust the programs to match any recipe.

Very Pleased with the outcome. Pretty much followed it as written. One thing that made a difference was the quality of the meat. I’ve used cut rate rib roasts, but bought this one from a higher quality source. Even though they are both rated as choice, it was a clear difference.

Can you keep the Bone in using rotisserie?

Hi. No you really can’t keep the bone in because it would impede the rotisserie spit from being placed through the middle. Also, it would add way too much weight and strain the motor. But it is fairly easy to remove the bone.

Have omni plus was unable to adjust to 250 left it at 280. Just checked the temp of roast. It was so moist and had great flavour !

Hi. Glad the extra 30 degrees didn't make much difference. I usually roast on very high heat but with a lo fan.
