Forget the oven. Forget the microwave. Baked Potatoes in the air fryer is the way to go! And for the best creamy and cheese bakes potatoes, these twice baked potatoes are the best of both the mashed and the bake potato world.
Air Fryer Twice Baked Potato
- 4 Russet Potatoes
- 2 Tbl Vegetable or Olive Oil
- 1 cup Shredded Cheddar Cheese
- 1/4 cup Sour Cream
- 1/4 cup Heavy Cream (you can use buttermilk or milk)
- 2 Tbl Butter
- 1 tsp Salt
- Ground Pepper
- optional, Scallions/Bacon/Toasted Panko Breadcrumbs
-Wash the Potatoes and make sure they are thoroughly dry with a paper towel and place in a bowl. Add 2 Tbl of Oil and coat the Potatoes completely.
-Preheat the Air Fryer Oven. Press “AIR FRY” and set temperature to 380° F for 35 mins. VORTEX PLUS: Place the slotted baking tray in the middle position.
OMNI/OMNI PLUS: Place baking tray on the second level.
-Once the Oven reads “ADD FOOD”, place the Potatoes on the tray.
-Once the Potatoes are done cooking (you can test for donenesswith a small sharp knife), allow them to sit in the Oven for 10 mins with the door OPEN. After 10 mins remove and place on a cutting board.
-Cut each Potato in half. Scoop out the inside leaving an 1/8 of and inch of Potato around the edge and place in a bowl. Try not to pierce the skin of the Potato.
-To the bowl add 1 cup Shredded Cheddar Cheese, 1/4 cup Sour Cream, 1/4 cup Heavy Cream, 2 Tbl Butter, 1 tsp Salt, and Ground Pepper. Mash and mix together with a fork.
-Add the mixture back into the scooped out Potato Skins. (You can add extra cheese on top.)
-Place the Potatoes back into the Ovens. (If using the Vortex Plus, place any that don’t fit onto the bottom of Oven.)
-Press “AIR FRY” and set temperature to 380° F for 2 mins. DO NOT PREHEAT!
-Once done, remove and serve with Scallions or Bacon. Buen Provecho!

where would I find the slotted tray you show in the recipe. I have the Omni Plus over

Hi. The slotted tray in three other is three Vortex Plus. If you have three Omni Plus just user the baking tray and the black tray on the bottom.

As a guess how much does each of your potatoes weigh. Since we can’t prick the skin to test for doneness, I want to be sure my potato is not too big and will not be done in the recommended time.

They are about 11 oz. But you can use a knife to check for doneness.

Do you think I could adapt your recipe for 1 small potato in the Vortex Mini 2 quart? The inside of the basket is 6-5/8” x 6-5/8” and about 3” deep. I’m not very good at cutting ingredients! However, it looks so good!

Absolutely! I would turn the potato during cooking and at the last step where you brown it, keep a close eye since the heating element is closer so you don’t want it to over cook.
